How to Make Khao Khua

Khao Khua (ข้าวคั่ว) is an essential ingredient found in Isan cooking. In the last video we showed you how to make Chicken Larb which included this ingredient that you can easily make at home. Khao Khua will have a more fragrant aroma when fresh just like black pepper peppercorns are when freshly cracked.

Keep some around in the kitchen as Jickee is from Isan, Thailand so you’ll see plenty of recipes from the Isan region on this channel.

How to make Khao Khua

 

Ingredients:

  1. Sticky Rice

ส่วนประกอบ:

  1. ข้าวเหนียว

Instructions:

  1. Add 400g of Sanpatong (Sweet Rice) to a wok at low heat
  2. Constantly mix the rice until it’s golden brown, about 25-30 minutes.
  3. Once rice is at a good color, turn off the gas and keep mixing the rice for another 10 minutes to allow the rice to cool, otherwise it may burn.
  4. Grind the rice in either a processor or in a kruk.

Tip

  • Don’t stop halfway roasting when some of the rice grains are still white, otherwise the Khao Khua will give you gas after eating it.
  • You can keep this in a jar for a month with peak aroma, it’ll start to wear off after 3 months.
