Ingredients:
- 3 Tbs Oil
- 2 Tbs Garlic
- 1 Tbs Fish Sauce
- 1 Tbs Sugar
- 6 Tbs Tamarind Sauce
- 1 Large Egg
- 2 Tbs Dried Shrimp
- 3 Chopped Chinese Chives
- 2 Tbs Diced Tofu
- 2 Tbs Chopped Peanuts
- 3 Tbs Sweet Radish
- 6 Peeled Shrimp
- 2 Cups Bean Sprouts
- 3 Cups Pad Thai Noodles
ส่วนประกอบ:

- กระเทียมทุบหยาบ 2 ช้อนโต๊ะ
- น้ำปลา1 ช้อนโต๊ะ
- น้ำตาล 1 ช้อนโต๊ะ
- ซอสมะขาม 6 ช้อนโต๊ะ
- ไข่ไก่ 1 ฟอง
- กุ้งแห้ง 2 ช้อนโต๊ะ
- ผักกุ้ยฉ่ายหั่น 3 ช้อนโต๊ะ
- เต้าหู้หั่นเต๋าบางๆ 3 ช้อนโต๊ะ
- ถั่วลิสงป่น 2 ช้อนโต๊ะ
- ไชโป้วหวาน 3 ช้อนโต๊ะ
- กุ้งสดแกะเปลือก 6 ตัว
- ถั่วงอก 2 ถ้วย
- เส้นผัดไทย 3 ถ้วย
Instructions:
Pad Thai
- Pre-soak your Pad Thai noodles for 10-15 minutes
- Heat your wok to medium heat
- Add oil and spread around the walls to prevent sticking
- Constantly mix the following ingredients
- Add garlic and mix until it starts browning
- Add tofu and fry until firm to prevent it from falling apart
- Add your egg and mix
- Add peeled shrimp and cook until it turns slightly orange
- Add Pad Thai Noodles and mix with Pad Thai Sauce
- Add dried shrimp
- Add sweet preserved radish (adds extra flavor)
- Add additional water to soften your noodles if necessary
- Add fish sauce
- (Optional) Add black sweet soy sauce for color
- Add Chinese chives
- Test if the noodles are soft enough, otherwise add more water
- Add more tamarind and fish sauce until you are satisfied with the taste.
- Remove from the wok when done
Hor Kai (Egg Wrap)
- Add 3 eggs into a mixing bowl
- Add 1 Tbs of soy sauce
- Whip the yolks until well mixed
- Add oil into a medium sized pan on medium heat
- Spread the oil ail and remove excess
- Add your egg mixture
- Spread mixture around to create an even and thin wrap
- Cook until the wrap is 98% cooked and dry, you can leave some residual to use as a glue to hold the wrap together. The heat will end up cooking the rest.
- Add your Pad Thai to the egg wrap and try not to overstuff it so you can easily wrap it without breaking the egg wrap.
Plate, cut, and enjoy your Pad Thai Hor Kai.
